Have Your Caramel and Eat it Too!
This recipe will challenge all you thought you knew about caramel. It is amazing! And both vegan and sugar free. This fall you won’t have to go without the sweet, gooeyness of caramel and all that it compliments. Caramel apples are not only scrumptious but wonderfully possible. I’ve even heated up 3 Tbsp of caramel in almond milk with espresso. Presto…Caramel Latte! Enjoy this beautiful fall season.
Delicious Date Caramel Recipe
1/4 tsp salt
1 Tbsp cashews
1/2 vanilla bean
1 cup coconut milk (all the fat on top)
Blend in a high speed mixer. You may have to pause to push the mix back into the blades many times…but it’s worth it! Blend until smooth. As the blades warm the mix, it will become easier. Warm the caramel up to dip or dip, chill and roll in pecans for caramel apples.
